Salame di Cioccolato

Ingredients:

  • 230g dark chocolate
  • 160g unsalted butter
  • 80g caster sugar
  • 2 medium eggs, beaten
  • 200g digestive biscuits or tea biscuits, crushed into small pieces
  • 2 tablespoons of Rum, or Amaretto liqueur
  • 20g cocoa powder
  • Icing sugar, for dusting

Instructions:

Chop the dark chocolate and melt it in a heatproof bowl. In the meantime, crush the biscuits into small pieces.

Add the unsalted butter to another bowl and soften it with a spatula. Then add the caster sugar, and mix well till it becomes creamy.

Beat the 2 eggs, then add them to the bowl with the butter and sugar, and mix. Once mixed add the rum and cocoa powder mix them in, too.

Once fully mixed add the crushed biscuits to the chocolate mixture and stir until well combined.

Place a large sheet of baking paper on your work surface, then transfer the chocolate mixture onto it. Using the baking paper to help you roll it into a log.

Once rolled, wrap the log in some plastic wrap. Twist the ends of the plastic wrap to secure the log.

Place the wrapped chocolate log in the refrigerator and let it chill for at least 3-4 hours.

Once the chocolate log is firm, unwrap it and dust it with some icing sugar, ensuring the surface is well coated.

Using a sharp knife, slice the chocolate log into rounds to resemble salami slices, and serve!
