Pasta e Zucchine

Ingredients (4 people):

  • 320g pasta (fusilli, penne, or your choice)
  • 600g zucchini, grated
  • 1 cloves garlic, minced
  • Extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil, chopped, for garnish

Instructions:

Bring a large pot of salted water to a boil. In the meantime, grate the zucchini with an extra coarse grater.

Drizzle some olive oil in a pan with the clove of garlic and sauté on a low heat. Add the grated zucchine to the pan and add salt and pepper. Cook the zucchine on a medium heat, stirring every so often.

Cook the pasta according to the package instructions until al dente. When ready reserve about 50g of the pasta water, then drain the pasta.

Remove the clove of garlic from the zucchini and add the drained pasta and the reserved pasta water. Mix the pasta into the zucchini until well combined, ensuring the pasta is well coated with the flavours.

Serve the Pasta e Zucchine hot, garnished with chopped fresh basil, enjoy!.
