Ingredients (4 people):
- 320g spaghetti
- 60g extra-virgin olive oil
- 3 cloves garlic, finely chopped
- 2 fresh red chili peppers, finely chopped
- Salt, to taste
- Fresh parsley, chopped, for garnish
Instructions:
Bring a large pot of salted water to a boil, then cook the spaghetti according to the package instructions until al dente. Reserve some of the pasta water, then drain the pasta.
While the pasta is cooking, peel the garlic, then finely chop it and the chili pepper. Add to a pan with the olive oil and warm over low heat. Be careful not to let the garlic or the pepper to brown.
If the garlic starts to brown too quickly, you can reduce the heat or remove the pan from the stove temporarily.
Once the garlic is fragrant and golden, add the spaghetti and 3 to 4 table spoons of the reserved pasta water to the pan with the garlic and pepper, and toss everything together to ensure the pasta is well coated with a creamy flavourful oil.
Garnish with chopped fresh parsley. Serve and enjoy!
